Cocoa and chocolate products have been used as medicine in many cultures for centuries for their health benefits. Amaretti

These delicious almond-flavored biscotti have an ancient history, as they were supposedly first made during the Middle Ages. Their name is derived from the Italian amaro, meaning bitter, in reference to the sharp flavor of bitter almonds or apricot kernels, which are traditionally used in the recipe, together with egg whites and sugar.

Nougat & Fudge

Nougat is a family of confections made with sugar or honey, roasted nuts, whipped egg whites, and sometimes chopped candied fruit. The consistency of nougat is chewy, and it is used in a variety of candy bars and chocolates. The word nougat comes from Occitan pan nogat, seemingly from Latin panis nucatus ‘nut bread’.

Malban resembles fruit jelly, except it is traditionally made with grape molasses, thickened with starch and flavored with rose water, mastic or orange blossom and stuffed with pistachios. Malban these days is covered with amardeen (apricot paste) or rose petals or crushed pistachios, even chocolate!.

Tartufo

Tartufo  is an Italian ice cream dessert originating from Pizzo, Calabria. It is usually composed of two or more flavors of ice cream, often with either fruit syrup or frozen fruit typically raspberry, strawberry, or cherry  in the center.

A true gourmet delicacy the truffle, or tartufo, is the only food on the planet that is literally worth its weight in gold. A truffle is the fruiting body of an underground mushroom, usually found near trees. This difficult to find fungus is extremely expensive and used in the highest of cuisine.
